牛肉の中でも最高部位と言われるヒレ肉をメルティーク加工(牛脂注入)し、よりジューシーで旨味あふれるステーキに仕上げました。（ニュージーランド産又は豪州産）
牛ヒレのブロックをそのまま、15mmの厚さにカットしています。
結着をしていないナチュラルな形状そのままなので、カットする部位により大きさにバラツキがあります。
ヒレ肉の中でも厚みのある中心部分は「シャトーブリアン」と呼ばれ、高級なヒレ肉の中でもさらに最高級とされています。
カットしたものを無選別にパックしておりますので、ミニヨン/シャトーブリアン/テートが混ざって、あるいは偏って入ります。
サイドマッスルは入りません。
小さなものは3cm×5cmくらい、大小混ざって1袋に25〜30枚前後入ります。
無選別にすることで、お値段を抑えてご提供できるようになりました。
どの部位がどのくらい入るのか、指定はできませんのでご理解ください。
バラ凍結を行っておりますので、使う分ずつ解凍することができます。
