長崎県平戸近海で獲れたあごを一匹ずつ手作業で串に刺し炭火で焼き上げた後、数日かけて乾燥させた、昔から変わらない手法で作られた焼きあごです。
あごは腸と背骨をとり昆布と一緒にし 一晩ほどつけるとしっかり出汁がでます。 一晩つけたものを火にかけ過熱します。 沸騰する前に昆布とあごを取り出し、かつおぶしを入れ１分～２分煮だします。 それを濾したら、美味しいあごだしの出来上がりです。 | |
