生で食べるとタラバエビ科でも最上のもの。生で食べるタイプのエビのなかでも食感が強く、ほどよく甘味がある。みそも非常に美味。外子はみどりで面白い食感。小型は素揚げではなく粉をつけて揚げるといい。さっと汚れを取り、水分をよくきり片栗粉をまぶして低温から揚げはじめ、最後には高温で揚げる。サクッとして食べた途端に強い甘味が口に広がる。
