マトソンラインで提供されていたすべてのディナーメニューは印刷物ではなく、リトグラフ（石版画）で製作されています。印刷物のように色落ちしにくく、太陽光などにも劣化しにくいので、アート性の高い作品です。リトグラフは石版用の石、または銅などの金属板に、油性インクで描いた絵を印刷する版画の一種で、美しいラインや絵筆のタッチ、色鮮やかな色彩表現が可能な印刷方法です。
1930年代、旅行産業が花形産業となりつつあり、豪華客船の時代を迎えたアメリカ・サンフランシスコに本社を置く船会社マトソンラインは「ルアライン」、「マトソニア」など8隻の客船を運航していて、ロサンジェルス、またはサンフランシスコから出港して6回のディナーを楽しむと、憧れの楽園、ハワイが待っていた。このディナーメニューを担当していたのがフランク・マッキントッシュ、ユージン・サベージ、ジョン・ケリーら当時を代表するアーティストたちだった。
フランク・マッキントッシュはオレゴン州に生まれ、少年時代にサンフランシスコに移り、チャイナタウンでオリエンタルアートの影響を受ける。UC バークレー校美術科で学んだのち、ニューヨークへ出て、『アジアマガジン』の表紙のイラストを9年間、描き続けた。この仕事によって、彼はオリエンタルアートの世界で名前を知られるようになり、マトソンラインからディナーメニューの仕事で一躍有名になる。この仕事を始めた当初、マッキントッシュはまだハワイに行ったことがなかった。
